You and your child can create cheesy broccoli animals and eggs that will make eating broccoli fun and delicious. Use animal-shaped cookie cutters, or just your hands to create animal eggs with your child.
What you’ll need:
- 3 cups fresh broccoli florets, chopped fine
- ½ tsp garlic powder
- ¼ cup parmesan cheese, grated
- ¾ cup cheddar cheese, shredded
- 1 medium egg
- Aluminum (oven safe) cookie cutters, optional
Preheat oven to 450 degrees Fahrenheit. Line a baking tray with aluminum foil and spray with cooking spray.
If using fresh broccoli, finely chop the broccoli and place in a medium bowl and cover with Saran Wrap. Poke holes into the plastic kitchen wrap in order to let steam out. Microwave for about 4 minutes, or until tender.
If using frozen broccoli, cook according to package directions.
Once broccoli is cooked, pat dry. If using frozen broccoli cuts, pulse in a food processor until broken down finely. You may choose to do this with the cooked fresh broccoli as well.
Add all of the ingredients to a large bowl.
If using aluminum cookie cutters, grease the inside edges with cooking spray then set them on baking sheet. Press broccoli and cheese mixture into the cookie cutter. Fill until 1/2-inch-tall, making sure to press into all the corners.
Otherwise (and for any additional mixture), form into egg-shaped tots the size about 2 inches long.
Bake for 18-20 minutes or until golden brown on top.
If using the aluminum cookie cutters, make sure they cool off completely before touching. It’s helpful to use a small knife along the edges to help the animals keep form.
